Mashed – Steam Ready Bag:
1. Place unopened bag in microwave, THIS SIDE UP. Distribute potatoes evenly in bag and heat on high for 12 to 14 minutes. Since appliances vary, these cooking times are approximate. If potatoes are not cooked, return to microwave and cook until soft. (Bag inflates slowly during cooking and allows steam to escape).
2. Let stand 2 minutes. Using oven mitts, REMOVE CAREFULLY, grasping top corners of bag. CUT top of bag and POUR potatoes into bowl. CAUTION: Contents will be hot.
3. Add 1/3 cup (80 ml) milk and 1 Tbsp (15 ml) non-hydrogenated margarine, and mash to desire smoothness. Consider adding salt, brown sugar, maple syrup, cinnamon, or other seasonings.
Mashed- Stove Top Steam:
1. In a pot bring to a boil. Cut open bag and pour potatoes into steamer basket. 2. Steam for 10 to 12 minutes until soft. 3. Put potatoes into a bowl, mash and season per step 3 above.
Roasted- Oven Baked:
1. Preheat oven to 450 ̊F (230 ̊C). Grease baking sheet with vegetable oil.
2. In a bowl, MIX potatoes with vegetable oil, 1-2 Tsp (5-10 ml) maple syrup, and pinch of sea salt, pepper, cinnamon, and nutmeg. PLACE potatoes on baking sheet in a single layer.
3. Bake 20 to 25 minutes, turning after 15 minutes. Place under broiler for last few minutes of cooking, until desired crispiness is reached. Monitor closely. DO NOT OVER COOK! Since appliances vary, these cooking times are approximate. Always cook to a light golden colour. When using smaller amounts, reduce cooking time.
Cooking Instructions (COOK FROM FROZEN): Product must be fully cooked for food safety and quality.

Q: My McCain® potato product was left out of the freezer and has thawed, can I still use them?

A: No, for food safety, you should not use frozen food products if they have thawed. To prevent food-borne illness, we recommend that you discard frozen food products that have thawed.

Ingredients
1 454 gm package McCain Purely Potatoes™ Sweet Potato Chunks 1/3 cup (75 ml) Maple syrup 2 Tablespoon (30 ml) Non-hydrogenated margarine to taste Sea salt and Ground black pepper
Cook McCain Purely Potatoes™ Sweet Potato Chunks in the microwave in the steam ready bag as per directions on the package. Remove sweet potato chunks from the bag and mash with maple syrup and non-hydrogenated margarine. Season to taste with salt and pepper.

Thyme Roasted Sweet Potatoes This slightly spicy, moist side dish is both deeply satisfying and nutritious.
Ingredients
1 454 gm package McCain Purely Potatoes™ Sweet Potato Chunks 3 Tablespoons Olive oil 3 tsp Minced garlic 1/3 cup Fresh thyme leaves 1/2 tsp Kosher salt or Sea salt 1/2 tsp Red pepper flakes
Preheat oven to 450°F. In large mixing bowl, combine all ingredients and toss so the sweet potato cubes are well coated. Arrange sweet potato cubes in single layer on heavyweight rimmed baking sheet or in 13x9-inch baking dish. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes. Watch to ensure the flakes do not burn. Serve warm. Serves 3-4

Sweet Potato Soup
Ingredients
2 tsp Butter 1 cup Chopped onion 1 cup Chopped celery 1 cup Chopped leeks, white and pale geen parts only 1 tsp Minced garlic 2 454 gm packages McCain Purely Potatoes™ Sweet Potato Chunks 4 cups Chicken stock or low salt chicken broth or vegetable broth 1/4 tsp Ground cinnamon 1/4 tsp Ground nutmeg 1/4 tsp Sea salt 1/4 tsp White pepper 1.5 cups 10% half & half cream or 2% milk if desired 5 tsp Maple syrup
Steam the 2 bags of McCain Purely Potatoes™ Sweet Potato Chunks in the microwave or on the stove top. Meanwhile, melt butter in an appropriately sized pot on low heat. Once butter is melted, start to sauté the chopped onions and increase heat to medium. While onions are sautéing prepare 1 cup of each of chopped celery and fresh leeks [white and light green parts only]. Sautee onions until lightly brown, then add the chopped leeks and celery, along with the minced garlic, sauté until soft and slightly caramelized In the following order, add to the pot: the cooked McCain Purely Potatoes™ Sweet Potato Chunks, chicken stock, cinnamon, nutmeg, salt, and white pepper, continue heating under medium heat. Using a hand stem / immersion blender carefully puree the contents until slightly chunky. Alternatively, use a blender or manual potato masher. Be careful not to splash hot soup onto yourself. Add the Maple syrup, and the 10% (half & half) cream to the pot while continuing to heat the soup. Using the hand stem blender again, puree the soup to the desired consistency. Heat on medium heat, stirring often to avoid scorching the soup to the bottom of the pot, until the soup is simmering hot. Garnish and season as desired. Hint: You can also add 1 cup of peeled, cored apple chunks when sautéing the chopped leeks and celery for a little extra sweetness and flavour. Serves 4-6

Sweet Potato Mousse A sweet treat for the entire family!
Ingredients
1 454 gm package McCain Purely Potatoes™ Sweet Potato Chunks 1/4 cup Vanilla yogurt 1/4 cup Cream 1/4 tsp Cinnamon
Preheat oven to 325°F. Prepare 1 bag of McCain Purely Potatoes™ Sweet Potato Chunks as directed. Put Sweet Potatoes in blender.If desired, garnish with chives and cheese. Add 1/4 cup vanilla yogurt, 1/4 cup cream, 1/4 tsp cinnamon and puree. Scoop mixture into individual ramekins Place ramekins on cookie sheet Bake at 325°F for 10 minutes. Remove and grate cinnamon stick over each Serve and enjoy!
